Bacon Wrapped Meatloaf and Roasted Yellow Squash

Ingredients:

1 small yellow onion
1 tablespoon of chipped garlic
2 lbs of lean ground beef
1 cup of panko bread crumbs
2 eggs
1/4 cup of ketchup
1/4 cup of mustard
1/4 cup of bbq sauce
1 teaspoon of salt
1 teaspoon of pepper
1 lb of bacon- (chopped in half.. dice one half into small bits and cook. Leave the other half in strips)

Saute onion and garlic in olive oil until translucent and place in a large bowl. Then cook half the bacon that is chopped up and once browned drain on paper towel and place in the bowl with the onions. Add the remaining ingredients and mix loosely and place into a baking dish and shape the meat mix into a loaf shape.

Drape the half bacon slices over the top of the meatloaf and cook in a preheated oven at 375 degrees for 45-50 min or until the meatloaf is done at 155 degrees with a thermometer.


Roasted yellow squash
5-7 yellow squashes diced into round discs
olive oil
salt and pepper

On a cookie sheet lay out the discs of squash and drizzle oil over the top and sprinkle with salt and pepper. Cook at 375 degrees for 10-15 min.

My hubs and my coworker said this meatloaf is the BEST they have ever tasted.. I will gladly take the compliment ;)
