Crockpot Chicken and Braised Cabbage and Parsnips


Many of you have heard me talk about my crock pot chicken recipe. It is SO SIMPLE it is pretty crazy. Simply buy a whole chicken from the grocery and rub it down with your rub of choice. I use Lowery's seasoning salt. But you can use anything you like! Put it in your crock pot on low setting and leave it until you come home. 8 hrs and the chicken will be juicy and delicious.
I was a bit late today with setting up dinner in the crock pot. So I decided to put the chicken pieces in the crock pot at noon.
Crock pot Chicken
-cut up chicken pieces.
-diced fresh basil, dill and garlic.
-run them down with olive oil
-salt and pepper
-1/2 cup of balsamic vinegar
- drizzle about 1/4 cup of honey over the top
-3 tablespoons of lime or lemon juice
I put the crock pot on high and left to cook for 4-5 hours. When I got home the house smelled amazing and the chicken was tender and juicy!
Braised Cabbage and Parsnips
-2 tablespoons of butter
-2 tablespoons of olive oil
-2 tablespoons of mustard (yellow or Dijon)
-6 to 10 peeled and diced parsnips
-one half of a cabbage chopped
1/4 cup of white wine vinegar
1 and 1/2 cups of chicken broth
1 tablespoon of salt
1 tablespoon of pepper
1 tablespoon of garlic salt
1 tablespoon of hot sauce
2 tablespoons of soy sauce
Melt the butter, olive oil and mustard in a deep pan. Add the chopped parsnips and cabbage. Then add all the remaining ingredients and simmer on med-high for 30 min or until the parsnips are soft.
